Does not matter. You'll buy one of it and will want to buy all 7 afterwards ;) But, yeah, 3 is good for starters.

I remember playing the 1st one back in the arcade and liked it, I downloaded 3 as it gets the most praise and its difficulty is off the rails. I would have got the first if I could wind back the clock.

I too have never played them and am thinking about getting one. It just seems wrong to me to buy 3 and play it first when the original is also available.
